Cucumber Salad

This is a zesty, refreshing Cucumber Salad that makes the perfect side dish or a tasty light lunch. Cucumbers offer a unique combination of nutrients including cucurbitacins, lignans, and flavonoids, which provide valuable antioxidant, anti-inflammatory, and anti-cancer benefits. This recipe is super easy to put together as it takes almost no time at all, which makes it the perfect party food especially summer BBQ’s!

Cucumber Salad Recipe

Makes 6-8 servings


  • 4 ounces of chopped peppers
  • 1 seedless cucumber diced
  • 3 celery sticks sliced
  • 1  small fennel bulb sliced
  • 3 green onions sliced


  • 1/3 cup olive oil
  • 3 tablespoon lemon juice
  • 1 garlic clove minced
  • 2 teaspoons fresh tarragon
  • 2 teaspoons fresh basil


  1. Combine peppers, cucumber, celery, fennel & onion in large bowl.  Cover & refrigerate.
  2. Whisk oil with lemon juice, garlic tarragon & basil, cover & refrigerate.  One hour before serving, toss salad with dressing.  Add sea salt & pepper to taste.
