Vegan Vanilla Ice Cream

With only four ingredients, you can quickly make this Vegan Vanilla Ice Cream to enjoy on a hot day or after your healthy meal with out feeling guilty. Serve it with a side of Mini Coconut Cream Chocolate Cups, Grain-Free Chocolate Cupcakes or Apple Berry Crisp, or your favourite pie (Pumpkin, Vegan PumpkinKey Lime) or cake (Apple CinnamonChocolate, or Gingerbread).

Vegan Vanilla Ice Cream Recipe

Ingredients

  • 2 cups coconut water or water
  • 1 cup raw cashews
  • 1 tablespoon vanilla extract
  • 1 drop liquid stevia

Note: Use less water and more stevia to make the ice cream more creamy.

Toppings (optional):

  • organic strawberries, blueberries, raspberries, or mix of berries of your choice
  • chopped almonds, walnuts or nuts of your choice
  • shredded unsweetened coconut flakes
  • raw cacao powder
  • cinnamon

Directions

  1. Blend in Blendtec (high speed blender).
  2. Add into the Ice Cream maker, and enjoy.
