Blueberry Muffins
Who doesn’t love Blueberry Muffins? Many regular and store-bought muffins are loaded with sugar and other artificial ingredients; these Maximized blueberry muffins will curb your carb craving and fill you up with real nutrients at the same time! Blueberries are a low calorie, nutrient dense berry with a high antioxidant capacity, which makes these delicious muffins perfect for a snack or an on-the-go breakfast that will not disappoint.
Blueberry Muffins Recipe
Makes 12 muffins
Ingredients
- ½ cup coconut flour, sifted
- ½ teaspoon sea salt
- ½ teaspoon baking soda
- 6 organic eggs
- Stevia to taste
- 1/3 cup grape seed oil
- 1 tablespoon vanilla extract
- 1 cup blueberries, fresh or frozen
Directions
- In a small bowl, combine coconut flour, salt and baking soda
- In a large bowl, combine eggs, grape seed oil and vanilla and blend well with a hand mixer
- Mix dry ingredients into wet, blending with a hand mixer
- Gently fold in blueberries
- Place batter in paper lined muffin tins
- Bake at 350 degrees for 20-25 minutes
- Cool and serve
