Broccoli & Pine-Nut Soup
This Broccoli & Pine-Nut Soup is delicious, simple, fast and healthy; could you ask for anything more? Broccoli is a good source anti-oxidants and glutathione, and said to be the healthiest member of the cabbage family. With just 5 ingredients, this soup is perfect for a middle-of-the-week winter meal or when you just need some warming up.
Broccoli & Pine-Nut Soup Recipe
Makes 6-8 servings
Ingredients
- 1 onion, diced
- 1 tablespoon coconut oil
- 3 cups broccoli, chopped
- 3 cups organic chicken stock or vegetable stock
- ¼ cup pine-nuts
Directions
- Fry onion in a large pot with oil on medium heat until slightly browned.
- Add broccoli and stock and simmer for 10-15minutes or until broccoli has softened. Cool slightly.
- Place in a food processor or use an electric blender to form a smooth texture.
- Heat to serve.
