Want a delicious, healthy soup that will warm your insides right up? Kale Mushroom Soup is perfectly versatile as a starter course or light meal. This combination of butter with sautéed onions, mushrooms, and kale will make your taste buds salivate before the soup is even ready.

Kale Mushroom Soup Recipe

Serves: 6

Ingredients

  • 1 tablespoon butter
  • Small onion, finely chopped
  • ½ pound mushrooms (crimini, baby bella, shiitake, whatever you like!), sliced
  • 5-6 cloves garlic, minced (with garlic press)
  • ½ teaspoon salt
  • 4 cups vegetable or chicken broth
  • 8-10 kale leaves
  • ¼ cup rice vinegar
  • Dash fresh ground pepper
  • Grated parmesan (optional)

Directions

  1. Melt butter in a pan at medium heat and cook onions until soft (3-4 minutes)
  2. Add salt and mushrooms and sauté mushrooms until they are browning and smell amazing (10 minutes)
  3. Add the garlic and cook another 2 minutes
  4. Add the rice vinegar and cook until the vinegar mostly evaporates (5 minutes)
  5. While the vinegar cooks off, place the broth in a large pot and heat at medium.
  6. Pour the mushroom/garlic/vinegar mix into the pot of heated broth and bring to a boil. Reduce heat to low and simmer about 15 minutes with a loose lid
  7. Cut out the hard kale stems and then roughly chop up the kale
  8. Add kale and pepper and cook another 10 minutes or so
  9. Taste and add more salt as needed
  10. Serve immediately and top with cheese if you wish
