Lemon Poppy Seed Muffins

Poppy seeds provide a pleasant crunch and colour to baked goods as well as minerals including calcium, iron and zinc. Sure to brighten up any morning, these fiber-packed muffins will become your new favourite healthy treat.

Lemon Poppy Seed Muffins Recipe

Makes 12 muffins or 24 mini-muffins

Ingredients

  • ¼ cup coconut flour
  • ¼ teaspoon celtic sea salt
  • ¼ teaspoon baking soda
  • 3 organic eggs
  • ¼ tsp stevia or xylitol
  • ¼ cup grapeseed oil
  • 1 tablespoon lemon zest
  • 1 tablespoon poppy seeds

Directions

  1. In a large bowl, blend together eggs, stevia, oil and lemon zest
  2. Blend dry ingredients into wet
  3. Fold in poppy seeds
  4. Spoon 1 tablespoon of batter into each greased mini muffin cup
  5. Bake at 350° for 8 to 10 minutes
  6. Cool and serve
