This Lemon Sorbet is the perfect sugar-free dessert for a warm summer night when your sweet tooth is getting the best of you, or to serve between courses at your dinner party to cleanse the palate. Just 3 simple ingredients create a delicious chilled dessert sans artificial sweeteners and sugar, unlike the store-bought or classic formulas for sorbet. Change up the flavour by replacing the lemons and zest with other fresh fruit, limes or berries, and adding herbs and spices as desired too. Adding a splash of coconut milk or almond milk will turn it into a sherbet.
Lemon Sorbet Recipe
- 6 organic lemons
- 1/2 cup lemon zest
- 1 cup simple syrup
To make simple syrup
- Combine 1 cup xylitol and 1 cup water in a saucepan and bring just to a boil then remove from heat.
- Blend all ingredients together.
- Pour into the container of the ice cream machine and process according to directions.
If you don’t have an ice cream machine, put it in a container in the freezer. Take it out every hour and mix until desired consistency is achieved.
