Cucumber Salad
This is a zesty, refreshing Cucumber Salad that makes the perfect tasty light lunch or side dish, especially for a spicy main dish such as Basil Chicken in Coconut-Curry Sauce or Thai Curry Stir Fry. Cucumbers offer a unique combination of nutrients including cucurbitacins, lignans, and flavonoids, which provide valuable antioxidant, anti-inflammatory, and anti-cancer benefits. This recipe is super easy to put together as it takes almost no time at all, which makes it the perfect party food especially for a summer BBQ!
Cucumber Salad Recipe
Makes 6-8 servings
Ingredients
- 4 ounces of chopped peppers
- 1 seedless cucumber diced
- 3 celery sticks sliced
- 1 small fennel bulb sliced
- 3 green onions sliced
Dressing:
- 1/3 cup olive oil
- 3 tablespoon lemon juice
- 1 garlic clove minced
- 2 teaspoons fresh tarragon
- 2 teaspoons fresh basil
Directions
- Combine peppers, cucumber, celery, fennel & onion in large bowl. Cover & refrigerate.
- Whisk oil with lemon juice, garlic tarragon & basil, cover & refrigerate. One hour before serving, toss salad with dressing. Add sea salt & pepper to taste.
