Cranberry Nut Bread
This sweet Cranberry Nut Bread will add flavour and crunch to your breakfast routine (toasted or not) or in a more savory setting; either way, you will have a hard time stopping at one slice. You can enjoy the comfort of bread without having to eat regular bread thanks to the versatility of coconut flour. This recipe also makes an amazing treat around the holidays, and will be sure to elevate your holiday Christmas home or office parties.
Cranberry Nut Bread Recipe
Makes one loaf
Ingredients
1/2 cups coconut flour
- 1 teaspoon celtic sea salt
- 1 teaspoon baking soda
- 6 organic eggs
- 1/2 cup grapeseed oil
- Stevia to taste
- 1 tablespoon vanilla extract
- 1 cup cranberries, frozen
- 1/2 cup walnuts, chopped
Directions
- In a medium bowl combine coconut flour, salt and baking soda
- In a large bowl blend eggs, grape seed oil, stevia and vanilla
- Blend dry ingredients into wet, then fold in cranberries and walnuts
- Pour batter into (2) greased 6.5 X 4 inch loaf pans
- Bake at 350° for 35 minutes
- Cool and serve
